White Peony (白牡丹), or Pai Mu Dan, is a delicate Chinese white tea made from tender spring buds and young leaves. Harvested as one bud and two leaves, the tea undergoes minimal processing, with gentle withering and slow drying to preserve its natural character.
The resulting infusion is light and aromatic, with delicate white floral notes, the sweet tartness of young peaches and a subtle biscuity finish.
Dry leaves: Slender, downy white buds accompanied by light green leaves with amber tones.
Flavour: Young peach, light vegetal notes and biscuit.
Process: Withered and slowly dried under controlled temperatures.
